The desire to preserve the uses and customs of Serra de Monchique led Idália Duarte and António Sequeira Duarte to develop a black pork sausage production unit, pioneer in Serra de Monchique. With about twenty years of existence, this family company that dedicates itself to the creation of certified black pig, in extensive regime, produces and sells in its stores, in the center of the village of Monchique, Portuguese sausages and hams. The Portuguese sausages are produced by hand, maintaining the knowledge and flavors passed on by previous generations. You can find in these stores: meat sausage, black pudding, "molho de arroz", "farinheira" or black pudding "farinha", greaves, loin in lard, white lard, colored lard and bacon. In addition to these products, there are others available such as: loin "paio"; sweet potato pastry, "filhoses", "bolo-rei", "folar", among others.
